The tofu processing traits of fourteen soybean varieties were studied. The results indicated that the variation of tofu yield and other tofu processing traits, eg. Ratio of Protein Amount in tofu to Total Protein Amount (RPAT), Ratio of Protein Amount in Soybean Milk to Total Protein Amount (RPA) and Ratio of Water Amountin wet tofu to Protein Amount in tofu (RWAT), were very significant. The correlations between total protein content and wet tofu weight (WTW), dry tofu weight(DTW), RPA, RWAT were not significant....

Glandless cottonseed protein was used to determine emulsifying end-point and compare the drop in viscosity, colored oil and conductivity. The experiments showed that three methods all can estimate emulsifying end-point of glandless cottonseed protein. Conductivity method is automatical, accurate, and simple. The solution degree of storage protein in water was increased extensively, but the emulsifying capacity of soluble storage protein declined at first and increased late.

A model system was developed to measure the emulsifying capacity of glandless cottonseed proteins and this study was also conducted to investigate the effect of enzymic hydrolysis on emulsifying capacity of two groups of glandless cottonseed proteins. A model system was developed to measure the emulsifying capacity of glandless cottonseed proteins and this study was also conducted to investigate the effect of enzymic hydrolysis on emulsifying capacity of two groups of glandless cottonseed proteins. Saline solution of glandless cottonseed proteins was mixed at 10,000rpm and oil was added continuously. The conductivity of the emulsion decreased gradually at first and finally to zero abruptly. Addition of oil was immediately terminated on observation of the sudden decrease to zero in conductivity. The volume of oil added was determined at different quantities of proteins. The volume was found tobe linearly correla ted with protein quantity and the value of the regression coefficient was taken as the emulsifying capacity of glandless cottonseed proteins. The emulsifying capacity of water-soluble glandless cottonseed non-storage proteins decreased by hydrolysis. With increasing extent of proteolysis, the solubility of water-insoluble glandless cottonseed storage proteins increased obviously. The emulsifying capacity of the dissolved proteins decreased at first and increased again.

本项研究建立了低酚棉籽蛋白乳化容量的测定模型,并探讨了蛋白酶水解作用对两类低酚棉籽蛋白的影响。在10,000r/min的高度搅拌下,向低酚棉籽蛋白的食盐溶液中不断添加油脂,所形成的乳浊液的导电率逐渐下降并最终突跃降至零。在观察到导电率突跃降至零时立即停止加油。按照此方法对不同量的蛋白质分别测定其耗油量,发现耗油量与蛋白质量的线性相关,回归系数的值即为低酚棉籽蛋白质的乳化容量。可溶于水的低酚棉籽非贮存蛋白经酶水解后乳化容量呈下降趋势。随着水解程度的提高,不溶于水的低酚棉籽贮存蛋白在水中的溶解度显著增加,溶出的蛋白质的乳化容量先下降而后又趋上升。
