This paper discusses the approaches to the biological control of postharvest diseases of fruits and vegetables with yeast, including biological effectiveness, biological mechanism, predominance and the recent research achievements of yeast used in postharvest biocontrol. The main mode of action of the yeast biocontrol agents against pathogen was considered as the competition for space and nutrients, direct parasitism and induced resistance in the host. In comparison with other antagonists, yeast biocontrol agents have shown great potential for the control of postharvest decay of fruits and vegetables, which are due to better biocontrol efficacy, producing no antibiotics. Furthermore, they can be used in combination with fungicide. Improving the biocontrol efficacy by biological engineering is the recent research field of biocontrol of postharvest diseases of fruits and vegetables with yeast. This paper also presents the problems of yeast used in postharvest biocontrol, and suggests new ideas for future research.

Rhizopus rot of peaches could be significantly suppressed by Pichia membranefaciens. Polyphenol oxidase (PPO), peroxidase (POD) and phenylalanine ammonium lyase (PAL) activities induced by inoculation with P. membranefaciens and R. stolonifer were studied in postharvest peach fruits. The activities of PPO and PAL in peaches increased significantly after 24 h of inoculation with P. membranefaciens + R. stolonifer, and maintained at a high level throughout the experiment. Rhizopus rot of peaches could be significantly suppressed by Pichia membranefaciens. Polyphenol oxidase (PPO), peroxidase (POD) and phenylalanine ammonium lyase (PAL) activities induced by inoculation with P. membranefaciens and R. stolonifer were studied in postharvest peach fruits. The activities of PPO and PAL in peaches increased significantly after 24 h of inoculation with P. membranefaciens + R. stolonifer, and maintained at a high level throughout the experiment. PPO and PAL could also be triggered by infection with R. stolonifer alone, but the levels of activity were lower than those treated with P. membranefaciens + R. stolonifer. However, fruits inoculated with P. membranefaciens + R. stolonifer or R. stolonifer alone did not stimulated POD activity. The results suggest that the activation of these defense enzymes is involved in the action of P. membranefaciens against R. stolonifer.

Pichiamembranefaciens能有效抑制桃果实采后软腐病。笔者观测和比较接种拮抗酵母菌P .mem branefaciens和软腐病菌Rhizopusstolonifer对采后桃果实多酚氧化酶 (PPO)、过氧化物酶 (POD)和苯丙氨酸解氨酶(PAL)活性的诱导情况。试验结果表明 ,桃果实接种P .membranefaciens +R .stolonifer 2 4h后 ,PPO和PAL活性开始升高 ,并在整个试验过程中一直保持较高的水平。只接种R .stolonifer也能诱导桃果实PPO和PAL活性的增加 ,但效果不如接种拮抗菌 +病原菌的好。然而 ,接种拮抗菌 +病原菌和只接种病原菌对诱导POD活性都没有明显的作用。可以认为 ,拮抗菌诱导抗性相关酶活性的提高是发挥抑病作用的一种重要方式
