The optimun conditions were determined,which included adjusting the pH to 2,temperature 90℃,extracting 60nin,degreasing by acid alcohol and precipitating by Al\-2 (SO\-4) \-3 of suitable amount,The extraction rate is 10.8%.The quality of the product conform to the standard of the China.

The potato residue, produced during making starch, can be transferred into pure eatable potato fibre powder by hydrolyzing in pH≈ 7 water solutions, under the presence of protease and lipase as catalysts. The experimental results showed that suitable hydrolyzing condition with lipase such as acidity,temperature and reactive time were pH≈7.5, T =45℃ and t =8~10 h respectively;with protease were pH≈ 7.1, T =60℃, t =10~12h.The potato fibre powder obtained by enzyme method have high purity and...

Meanwhile, this method may supply a reference for manufacturing other fibre foods.

利用生物蛋白酶和脂肪酶对生产土豆淀粉过程中产生的土豆渣在近中性条件下进行水解 ,制备成了食用性高纯土豆纤维粉。该实验结果表明 :对蛋白酶的适宜水解温度应为 60℃ ,最佳 p H值为 7.1 ,时间为 1 0~ 1 2 h;对脂肪酶的适宜水解温度应为 45℃ ,最佳 p H值为 7.5 ,时间为 8~ 1 0 h.通过酶法处理后得到的纤维素具有纯度高 ,口感好等特点。同时 ,也为制备其他纤维性食品提供了一种参考途径
