利用紫外分光光度法和高效液相色谱法,研究了茶叶中茶多酚(TP)的浸提工艺条件。实验证明:乙醇可以抑制茶多酚,尤其是儿茶素的氧化,40%乙醇在40℃浸提10min三次,茶多酚的浸提率为32.1%,EGCG、EGC、C、EC、ECG分别为7.5%、4.1%、0.1%、0.6%、2.2%,茶多酚和儿茶素的浸提率较用纯水浸提分别提高29.4%和16.1%。
