在实验室条件下,对三种小麦粉制面后粉碎得断头粉,分别对三种面粉和相应断头粉的面团物理特性、蛋白提取组分、各提取组分中的游离巯基、凝胶层析中的蛋白分子分布、SDS—PAGE中蛋白亚基分布进行了测定。发现断头粉蛋白相应原粉蛋白发生明显变化。由改良的Osborne提取方法测得:断头粉中盐溶蛋白、醋酸溶谷蛋白减少,醇溶蛋白、SDS溶谷蛋白、残渣谷蛋白升高。Ellman试剂比色法测定游离巯基的结果为:断头粉中各含有游离巯基的蛋白组分中,游离巯基均降低,Sepharose 4B层析表明:断头粉中高分子谷蛋白含量升高。定量SDS—PAGE发现:断头粉各组分中的蛋白亚基在量上均发生变化,特别是盐溶蛋白部分低分子量亚基转变为醋酸溶谷蛋白的低分子量亚基。这些变化归结为蛋白分子在制面过程中发生的氧化聚合反应。文中提出了制面过程中蛋白分子变化的原因,机理及蛋白变化的模式,解释了断头粉面团特性增强的原因。

Effects of two kinds of gemmated wheat on a-amytase activity, on physical properties of dough, on solubility fractions of protein, on sulfhydryl group contents in flour and protein fraction and on the sedimentation value in various sprouting periods were examined. It was found out that the changes of the protein in moisture wheat had a very important effect on the quality of the gemmated wheat.

本文采用3H-TdR掺入法,研究了覆盆子的四种提取组分在体外对脾脏淋巴细胞DNA合成的影响,并从环核苷酸角度探讨其机理。结果表明覆盆子的四种提取组分:水提取液、醇提取液、粗多糖和正丁醇组分均有明显的促进淋巴细胞增殖作用。在没有丝裂原存在时,其增殖指数在3.0左右。在有微量丝裂原辅助下。其增殖指数亦为3.0左右(相对于微量丝裂原组)。在淋巴细胞激活的早期伴有cAMP水平的升高。
