仙人掌粗多糖具有很多生理活性功能,但是由于其稳定性有限,使仙人掌中粗多糖的含量在细化和均质等不同干燥前处理工艺条件下也有所不同,因此,试验研究它的干燥前处理工艺是非常必要的。本文采用苯酚-硫酸法检测粗多糖含量,试验研究不同前处理工艺条件对仙人掌中粗多糖含量的影响。结果表明,对粗多糖成分影响最大的工序是初步细化和高压均质两步。选用纱布过滤替代胶体磨处理,不但可降低能耗,而且有效减少多糖的损失;在满足喷雾干燥工艺要求的前提下,选用高压短时的均质条件,可有效保留多糖;去皮处理对仙人掌中的多糖含量影响不大,而且可减少高压均质时间,降低能耗。
