The results showed that the food intake of children corresponded to the food available in market. Nutrients intake except iron was all less than the recommended dietary allowance. A high incidence of malnutrition sign and a low growth rate in those children were noted. After four months nutrients-fortified bread feeding, the nutritional status of children was improved, especially energy, protein, riboflavin and calcium. The effect of nutrients fortification was more apparent in ten-years old children than in eight-years old.

合理营养可增进儿童身体发育与健康。我们对哈市两所小学8岁及10岁儿童各30名进行了全年四个季节的营养调查,结果表明,小学生的食物摄入量及食物种类有明显的地区性与季节特点。除铁的摄入量超过供给量标准,其余营养素与热能均明显地低于标准。脂肪生热比过高,三餐热量分配比不适宜,致使儿童营养水平低下,营养缺乏体征检出率高,生长发育受阻。经加食儿童营养面包四个月后,可见到蛋白质、热能、核黄素及钙等营养素对增进儿童生长发育与健康的良好作用。10岁组比8岁组对营养改善的反应更为敏感。

The results showed that all parameters, weight gain, FE, PER, nitrogen balance, level of hemoglobin and serum calcium, ratio of organ to body, and pathological examination in rats fed with the "D" bread were significantly superior to the other kinds of foods but positive control group fed with AOAC synthesized fodder. Therefore, the studies of nutritional effects of those foods on human body should be performed after suitably modifying the formulas.

由已报道的配方试产的儿童食品中选择5种进行大鼠营养实验。结果表明,各组动物的体重增重、饲料效价、蛋白质功效比值、氮平衡、蛋白质真消化率、血清钙、动物脏体比值及病理解剖与镜检等指标均以强化赖氨酸的儿童营养面包的营养效应显著地优于其它各实验食品。由于阳性对照组各项指标均合乎规律地优于实验食品组,说明本实验结果可信。据此配方适当修改后,可进行人体营养效应观察。

This kind of food has high nutritional effect on the children's growth and development and biochemical indexs, obviously improving the learning behavior and grades and decreased the rate of absence from school because of illness. In this formula many kinds of food were produced. After the kindergarden children ate these kinds of food for half a year, the incidence of IDA decreaded from 21.7 to 1.07 percent.

调查分析结果表明,市售儿童食品皆为高热能食品,无助于解决现存的儿童营养问题。作者采取强化大豆与其制品和平衡氨基酸措施,研制出11种儿童食品。经感观检查,成分分析、动物饲养实验,得出氨基酸平衡的谷-豆型儿童营养面包最佳配方与产品。该食品对儿童生长发育、生化指标有显著的营养效应,对学习行为、学习成绩、因病缺课率等均有明显改善。以此配方生产的多种儿童主食品,经长期食用,缺铁性贫血发病率由21.7%下降为1.07%。
