The present studies have shown that there are direct interactions between L-as-partic acid as a product of the enzyme-catalyzed hydrolysis of L-asparagine and L-asparaginase by the comparative studies on the effects of the product and succinic acid on the enzyme fluorescence and by the observation of the quenching of the enzyme fluorescence with iodine ions when the product is present in the enzyme solution.L-aspartic acid is able to protect the enzyme from inactivation by proteases and thermal treatment, which suggests that L-aspartic acid combines with the enzyme after all of the substrate molecules are turned into the product molecules and locates somewhere nearby the active center of the enzyme.
