对黄旦鲜叶分别进行室内自然摊凉和弱光下日光萎凋,按四种不同的失水方式和失水程度加工成绿茶。从茶样的感官审评结果可知,室内自然摊凉的香气优于日光萎凋的,滋味则相反;香气和滋味,重度失水的均优于轻度失水的;重度自然失水的会产生花香;四种处理对绿茶汤色影响不明显。毛茶样的生化分析结果表明,EGCG含量随失水程度加重而下降,同等失水程度自然摊凉的EGCG含量高于日光萎凋的。
