The physicochemical property, the characteristic of the fatty acid composition and the antioxidative property of several common vegetable oils are studied, based on which and by virtue of the ideal fatty acid proportion, the antioxidative property, the thermal stability and the flavour evaluation recommended by the current world nutrition, three proportion oils satisfying different people of different uses have been optimized through large amount of experiment. The physicochemical and antioxidative properties, the thermal stability, the flavour evaluation, the composition and the characteristic of these three proportion oils have also been studied and discussed. After being mixed scientifically and reasonably, not only the fatty acids composition of the oils and fats can make up each other's deficiencies. but also the quality and the antioxidative property of the oils have been improved and increased, furthermore, it can offset the deficiencies which some single oils are incapable of surmounting.

研究了几种常见食用植物油的理化特性、脂肪酸组成特点、抗氧化性能;在此基础上,以目前世界营养学界所推荐的合乎理想的脂肪酸配比、抗氧化性能、热稳定性、风味评分等指标为依据,通过大量实验优选出三种适合不同人群和用途的调和油,并对这三种调和油的理化特性、抗氧化性能、热稳定性、风味评分、配方及特点进行了研究和论述。油脂经科学合理的调和后,不但在脂肪酸组成上起到取长补短的作用,而且油脂抗氧化性能、油脂品质得到明显的改善与提高,并且能克服食用某些单一油脂无法克服的缺点。

Conclusions The blend oil could be used as a kind of fairly ideal edible oils.

目的为改善人群油脂营养提供科学依据。方法30只SD系雄性大鼠随机分为3组,分别给予基础饲料、含12%猪油饲料及含12%调和油(主要由豆油和菜油调制而成)饲料喂饲21d。结果猪油组(阳性对照)大鼠血清总胆固醇(TC)、血清TC/HDLc及血清脂质过氧化产物丙二醛(MDA)水平均显著高于基础组(阴性对照,P<0.05);调和油组血清TC、甘油三酯(TG)及MDA水平均显著低于猪油组(P<0.05);调和油组血清TG显著低于基础组(P<0.05)。结论调和油可以作为比较理想的食用油。

One mathematical model was found in the process of the mixture of corn oil, according to the reference of provided for developing countries by WHO and FAO that the ratio of SFA, MUFA and PUFA was 111, the results showed that the model was useful in the preparation of various mixing oils by modulations the moded.
