The physicochemical and antioxidative properties, the thermal stability, the flavour evaluation, the composition and the characteristic of these three proportion oils have also been studied and discussed. After being mixed scientifically and reasonably, not only the fatty acids composition of the oils and fats can make up each other's deficiencies. but also the quality and the antioxidative property of the oils have been improved and increased, furthermore, it can offset the deficiencies which some single oils are incapable of surmounting. 研究了几种常见食用植物油的理化特性、脂肪酸组成特点、抗氧化性能;在此基础上,以目前世界营养学界所推荐的合乎理想的脂肪酸配比、抗氧化性能、热稳定性、风味评分等指标为依据,通过大量实验优选出三种适合不同人群和用途的调和油,并对这三种调和油的理化特性、抗氧化性能、热稳定性、风味评分、配方及特点进行了研究和论述。油脂经科学合理的调和后,不但在脂肪酸组成上起到取长补短的作用,而且油脂抗氧化性能、油脂品质得到明显的改善与提高,并且能克服食用某些单一油脂无法克服的缺点。 Objective This paper was intended to provide scientific foundation for improving population nutrition of lipids.
