    Seventy-five preschool children with hemoglobin content below 11 g/dl in kindergartens and nurseries were divided into five groups. The first, second and third groups were given 10 mg, 20 mg and 30 mg of iron in the form of ferrous sulfate syrup respectively every day for two months, while the fourth and fifth groups were given 100 mg ascorbic acid and 100 mg ascorbic acid plus 10 mg iron respectively every day for one month. The average hemoglobin content in the order of the five groups were 9.6±1.16, 10.6±1.34,...

    Seventy-five preschool children with hemoglobin content below 11 g/dl in kindergartens and nurseries were divided into five groups. The first, second and third groups were given 10 mg, 20 mg and 30 mg of iron in the form of ferrous sulfate syrup respectively every day for two months, while the fourth and fifth groups were given 100 mg ascorbic acid and 100 mg ascorbic acid plus 10 mg iron respectively every day for one month. The average hemoglobin content in the order of the five groups were 9.6±1.16, 10.6±1.34, 9.7±0.91, 9.7±0.85 and 11.0±1.86 g/dl respectively before treatment. After 1-2 months of iron or ascorbic acid therapy, the average hemoglobin contents raised to 12.0±.31, 12.0±1.06, 12.0±0.79, 11.0±1.86 and 12.7±1.37 g/dl respectively. There were highly significant differences (P<0.001) of hemoglobin contents before and after iron or ascorbic acid therapy of the five groups. The RBC count and percentage of hematocrit before and after the treatment of iron or ascorbic acid also showed highly significant differences (p<0.005). As the average hemoglobin contents of the first three groups after two months of iron treatment were the same, it was believed that 10 mg of iron per day by mouth was sufficient for curing iron deficiency anemia of preschool children. From the result of the last two groups, it was suggested that ascorbic acid could increase the therapeutic effect of iron in the treatment of iron deficiency anemia.A kind of soft drink powder fortified with ferrous sulfate 450 mg and ascorbic acid 270 mg per 100 g was prepared for the treatment of iron deficiency anemia of preschool children. A child taking 10 g of the powder per day received 9 mg of iron and 27 mg of ascorbic acid. Thirty nine children under three years of age with hemoglobin content below 11g/dl served as the experimental subjects. 16 of them were treated with fortified soft drink powder for one month, and the rest 23 children for two months. The average hemoglobin contents of the two groups before treatment were 10.4±1.73 and ]0.6±1.19 g/dl respectively. After treatment, they were 13.1±1.76 and 14.3±1.77 g/dl respectively. The differences in hemoglobin contents before and after iron therapy in these two groups were highly significant (p<0.001), and the percentage of hematocrit and RBC count also showed highly significant differences (p<0.001).Another group of 101 children under three years of age living at home were also treated with 10 g of fortified soft drink powder daily; 11 of them with average hemoglobin content below 11 g/dl, 17 children with hemoglobin content of 11-12 g/dl and the rest 73 children with hemoglobin content above 12 g/dl at the beginning. After three months of treatment, the average hemoglobin content of the first group increased from 10.1±0.60 to 15.1±1.53 g/dl, the second group from 11.3±0.3 to 15.0±2.26 g/dl and the third group from 12.1 ± 2.51 to 15.3 ±2.30 g/dl. The differences before and after treatment of these three groups were highly significant (p<0.001). The percentage of hematocrit before and after treatment also showed highly significant differences (p<0.001).

The addition of 100g of pork meat increased nonheme iron absorption to 9.67% (1.08mg). Green tea drunk after the meal decreased absorption to 3.07% (0.27mg).Iron fortified Chinese Soy Sauce consumed with vegetable meals could favor very significantly to meet the iron requirement of the general population in China. Addition of ascorbic acid to fortified soy sauce would further increase its iron bioavailability. Known enhancer (pork meat) and in-hibitor(green tea) of non-heme iron absorption will modify in a predictable way of iron bioavailability from vegetable meals containing iron fortified soy sauce.
