An ion exchange-colorimetric method for the determination of phytic acidin cereal was described. Samples were extracted by Na2SO4-HCl and separated by ion-ex-change resin. FeCl3-sulfosalicylic acid solution was decolourized by phytic acid, and whichwas quantated by measurement the absorbance at 500nm. The lowest limit of determinationwas 0.05mg/g. The precision(RSD% ) was 0. 78~4. 9. The recovery was 100. 9 ±2. 7%. De-termination results showed satisfactory agreement with the other method.

In normal temperature this acid is deoxidized to phosphor-molybdenum-blueness complex compound whose max absorb-wavelength is 700 nm. It is obey bill Law when the phosphor content ranges 0~1400 μg/L. The examining limit is 0.024 μg/mL.
