The cooking and eating qualities of 47 hybrid rices including Indica and Sinica types were studied. The results indicated that most of the Indica hybrids had high amylose content (AC), hard gel consistency (GC), intermediate gelatinization temperature (GT), and medium grain elongation (GE); while most of Sinica hybrids had low AC, low GT, and soft GC. The cooking and eating qualities of 47 hybrid rices including Indica and Sinica types were studied. The results indicated that most of the Indica hybrids had high amylose content (AC), hard gel consistency (GC), intermediate gelatinization temperature (GT), and medium grain elongation (GE); while most of Sinica hybrids had low AC, low GT, and soft GC. The performance in terms of the cooking and eating qualities for the hybrid rice was better than that of the early semidarf rice, but equal to that of the late semidarf rice in both types. The analysis of correlation showed that there were no correlations between any two characteristics of AC, GC. GT, and GE within the lndica or Sinica except between AC and GC in the Indica type. Improvement of the cooking and eating qualities of Chinese hybrid rices was also discussed.

分析了全国47个不同籼粳杂交水稻组合的蒸煮和食用品质。结果表明,我国多数杂交水稻的直链淀粉含量较高,胶稠度硬,糊化温度和籽粒伸长率中等;多数粳型杂交水稻的直链淀粉含量低,胶稠度软,糊化温度低。从总体分析,我国籼型杂交水稻的蒸煮和食用品质优于当前种植的早籼稻,与晚籼稻相近。相关分析表明,.在籼粳同类型的杂交水稻中,除籼型杂交水稻的直链淀粉含量与胶稠度外,其直链淀粉含量,胶稠度,糊化温度和籽粒伸长中的任两两性状间均无明显相关。本文讨论了改良我国杂交水稻蒸煮和食用品质的途径。

本文试图从理论与实践的结合上论述我国杂交水稻研究成功及其转化为巨大生产力,是与农业科技情报工作对它的系列服务分不开的。首先,农业科技文献工作为研究选题发挥了先导作用和启迪职能,为其胜利地攻关提供了重要参考、科学依据和有效借鉴;其次,科技情报报道传递和翻译工作,也加快了杂交水稻科研、生产和决策管理的进程以及杂交水稻技术在世界的传播速度。本文还列举事例揭示了为杂交水稻科技和生产开展有偿服务对增添科技情报单位的活力具有重要作用。

But the yield potential of existing three-line intervarietal hybrids have reached a plateau and the sourcesof cytoplasmic male sterility are poor.The grain quality for most of the existing rice hybrids belongs to midor poor classes.For further development of hybrid rice,the strategy is to improve the adaptability to variouseco-systems,yield potential,grain quality, disease and insect pest resistance and seed production yield ofrice hybrids through new breeding methods and germplasms. Recently two-line system hybrid is going toget success and meanwhile the three- line system intervarietal hybrid is still the majority of rice hybrids inproductionbythe year of 2000.Many countries in the world have started hybrid rice programmes, which means there is a bright futureof international market for hybrid rice for China. There are many ways for sharing Chinese hybrid rice tech- niques such as transfering of techniques or hybrid combinations,seed production and supplying in or outsideChina and technical trainings,with other countries.

我国杂交水稻从开始研究至今已有30年历史,已为我国粮食生产作出了巨大贡献。要进一步发展杂交水稻,必须通过育种方法和材料的改进来提高组合的多样化、产量潜力、品质、抗性和制种产量。两系杂交稻正在走向成功,三系杂交稻在本世纪仍将是主力。杂交水稻国际开发前景可观。
