Apple peel was used as raw material in this experiment to extract pectin. The method of producing pectin that extracted by HC1 and precipitated by Al2(SO4)3 was applied. The influence of pH value, time of extraction, amount of abstraction, temperature and amount of Al2(SO4) 3 on the production rate,jelly grade and jelly unit of pectin were approached. The optimal combination of extraction conditions was: weight suitable dried apple peel and transfer to 20 times water, adjust the pH to 2. 8 and heat with stirring at 95℃ for 115min,then add 30% Al2(SO4)3to the filterd pectin liquor to preciptate pectin. The experiment also approached methods of filtrate,separation of aluminum and decolorization. It was considered that the best ways were centrifugation with the rotational speed 3000rpm further pruification accomplished with 2% activated carbon to decolorize and deoderize,the mixture is agitated about 20min at 60℃;pectin coprecipitating with colloidal Al(OH)3was vigorous agitated with an appropriate amount of 60% alcohol containing 1.2N HC1 to remove the aluminum. The method of pectin precipitated by salt can save 82% alcohol compared with the general method of pectin precipitated by alcohol. The quality of pectin conform to the national standard.

本实验是以苹果皮为原料提取果胶,采用盐酸溶液萃取、硫酸铝沉淀提取果胶的方法(简称盐沉淀法),探讨了萃取温度、萃取时间、萃取液量、萃取液pH值以及硫酸铝用量对果胶产率、凝胶强度和凝胶单位数的影响,获得最佳提取条件是:一定量的苹果皮置于20倍水中,调节pH值至2.8,加热至95℃,并恒温115min,萃取液过滤后,加入原料量30%的硫酸铝以沉淀果胶。本实验还进一步探讨了果胶萃取液的过滤、脱色以及果胶-氢氧化铝胶凝体脱铝的条件,确定萃取液在3000rpm条件下离心分离,加入2%活性炭于60℃条件下脱色20min,果胶-氢氧化铝胶凝体在含1.2N盐酸的60%乙醇中激烈搅拌至糊状脱铝效果好。盐沉淀法与常规醇沉淀法相比,可节约乙醇82%,盐沉淀法提取的苹果皮果胶质量达到国家标准。
