The interaction laws between dietary fiber and minerals such as Fe (Ⅱ),Zn (Ⅱ),Mg (Ⅱ), Ca (Ⅱ) were described in this paper. A kinetic model was set up and some key parameters had been carried out. A comparation between dietary fiber coming from soybean hulls and that from barley hulls was studied in this way, the well bioavailability of minerals in soybean hulls was explained theoretically.

In this paper, the components of soybean protein concentrate (SPC. ) soybean pro-tein isolate (SPI) and soybean powder for sale were analysed. Their functional properties were evaluated by nitrogen soluble inder (NSI). Oil absorption, water-holding capacity, emulsification foaming properties, minimun gelatigenous concentration and superfacial vis-cosity and the color and odor by sensory evaluation. It was concluded that the functional properties of different products were different. Differences in chemical components and de-naturation degree of protein of the same kind of products produced by different factories were large, which together with the conditions (PH、 temp etc) in the food processing had direct effects on the use characteristics of products. Therefore, the use characteristics could be judged by determining the indexes such as protein content, NSI and sensory evaluation be-fore applying those products for food processing.

本文对部分市售大豆分离蛋白、浓缩蛋白、大豆粉进行了成份分析,测定其氮溶解指数(NSI)、油吸收性、持水力、乳化性、泡沫性、最小胶凝浓度、表观粘度、还用感观评定了样品的色泽和气味。结果表明:不同的产品其功能性质是不相同的,同类产品因生产厂不同其化学成分、蛋白质变性程度差异较大,这些差异与食品加工中所遇到的环境条件(pH、温度等)一起直接影响了它们的应用性能。食品加工厂在应用前可通过测定蛋白质含量、氮溶解指数等指标结合感观分析来判别其应用性能。
