将苜蓿按一定比例添加到 2种商业面粉 (巨粮寺特一粉、金像面 )中进行粉质、拉伸及烘焙试验。结果表明 ,随着苜蓿添加量的增加 ,面团吸水率、弱化度增加 ;形成时间、稳定时间缩短 ;最大拉伸阻力、拉伸能量减小 ;面包比容下降。当巨粮寺特一粉在添加 3 %~ 5 %苜蓿 ,金像面粉在添加 7%~ 9%苜蓿时 ,烘焙品质接近对照 ,可以接受。
