为了探索饲粮能量和蛋白质对肉鸡肉质的影响 ,试验设计了两因子 (能量、蛋白质 )、三水平 (低、中、高 )的交叉组合试验 ,来研究不同的能量和蛋白质水平对肉鸡肉质的影响。饲粮能量和蛋白质的低、中、高三个水平分别是NRC(1994)肉仔鸡饲养标准中能、蛋白水平的 80 %、10 0 %、12 0 %。结果表明 :(1)增加饲粮蛋白质水平或减少能量水平可增加胸肌率 (P <0 0 5 )、腿肌率 (P>0 0 5 )。 (2 )肉鸡胸肉钙激活蛋白酶 (Calpains)活性随饲粮能量和蛋白质水平的增加而减小 (P <0 0 1)。 (3 )饲粮能量水平增加 ,鸡肉水分含量减少 (P <0 0 1) ,但鸡肉脂肪沉积持续增加 (P <0 0 1)。饲粮蛋白质水平增加 ,鸡肉中粗蛋白质含量增加 (P <0 0 1) ,胸肌系水分增加 (P <0 0 1) ,蛋白质水平过高也会增加鸡肉脂肪沉积 (P <0 0 1)。为获得较好的肉质 ,饲粮能量水平不宜过高 ,蛋白质水平不能过低。

An experiment was conducted to examine the effects of dietary energy and protein levels during early growth period on performance and carcass of broilers. The results showed that body weight was decreased by low ME diet and low protein diet during the restriction time (P<0.05) . Complete compensatory growth was observed in the following realimentation period. Feed conversion efficiency was not improved by different energy and protein restriction levels during early growth period (P>0.05). The meat weight of leg and breast tended to increase due to feed restrictions (P>0.05). In low ME groups, the weight of abdominal fat was decreased(P<0.05), but the weight of abdominal fat was increased in low protein groups (P>0.05).

本试验研究肉仔鸡生长早期 (2~ 3周龄 )不同代谢能、蛋白质限饲水平对生产性能和胴体品质影响。结果表明 :(1 )早期低代谢能和低蛋白的限饲处理均可明显降低肉仔鸡生长速度 (P <0 .0 5) ,并在恢复阶段表现出完全补偿生长。 (2 )早期不同代谢能、蛋白限饲水平对饲料转化率没有影响 (P >0 .0 5)。 (3)早期不同代谢能、蛋白限饲水平均有提高胴体产量、胸肉和腿肉比例的趋势 (P >0 .0 5)。 (4)早期低代谢能限饲明显降低 42日龄腹脂重 (P <0 .0 5) ,低蛋白质限饲增加腹脂重 (P >0 .0 5)。
