During the experimenl period(325 days),the average daily gain of the bulls, Cows and sleets Was 695,545 and 588 gm.respectively.The feed units Consu- med by them for Per Kilogramm gain Were 8.43,9.96 and 9.63 kg respectively. The average dresing Percent of the nine Cattle Was 58.24%.The average eye muscle area Was 97.02 cm~2,of which the bulls,Cuws and steers were 106.53, 89.93 and 96.95 cm~2 respectively.Meat/bone Was 6.13,Meat/fat Was 6.52. The samples of beef from 9-11 ribs Contain about 57% Water,28.08% fat, 17.47% gross protein and 0.77% ash.The flavor and juiciness of beef are good for man.The measurement of Carcass and development of all vital organs Were normal.

秦川黄牛是我国著名的役肉兼用品种。为了研究秦川牛的早熟性和肉用性能,我们于1979年用30头(公10,母15,阉5)6—7月龄的秦川牛进行了肥育试验。并于12月13—15日第一批试验牛达18月龄时屠宰了9头(公3、母4、阉2),以测定其肉用性能。结果表明,试验母牛280天左右即进入性成熟期,公牛12月龄即可射出能供干冰(-79℃)冷冻的成熟精子。在十一个月(325天)的试验期间,公牛平均日增重为0.70公斤,母牛0.55公斤,阉牛0.59公斤。每公斤增重的饲料消耗量分别为7.83,8.69,9.63个饲料单位。第一批9头试验牛的平均屠宰率为58.24%,净肉率为50.50%。眼肌面积平均为97.02cm~2,其中公牛为106.53cm~2,母牛89.93cm~2,阉牛96.95cm~2。骨肉比为1:6.13,脂肉比为1:6.25。9—11根助骨样块的水份含量为53.75±8.23%,脂肪28.08±10.2%,蛋白质17.47%±2.05%,灰份0.77±0.11%。肉质品味良好。胴体体尺及各部内脏器官的发育均正常。

The guan zhong black breed-group can be classified as a earler maturing type. However,less well development hind-quarter need be corrected.It is possible to nurture the pig toward a longer frame,leaner cut and fuller ham development thro- ugh election and feeding method.

据三个品系群的18头去势公猪和18头母猪的资料大体上与前人关于生长梯度的学说符合。60、240及300日令时平均体重分别为10.16±1.55、88.74±14.10及106.63±17.90公斤。120—180日令期间生长最快,平均日增重510.7克,其后减慢。60—240日令或体重10—90公斤期间平均日增重437克,每公斤增重饲料消耗量约合3.83饲料单位或消化能10260大卡、可消化粗蛋白质419克。屠前空腹活重83.17公斤时,屠宰率70.92%、胴体长77.72厘米、膘厚3.94厘米、皮厚0.33厘米、眼肌面积21.16平方厘米;胴体瘦肉率50.08%、脂肪34.84%、骨骼7.34%。三系间在日增重、饲料报酬及胴体性状上无显著差异,但Ⅰ系皮最厚、Ⅲ系体短而体躯率(胸围/体长)高。关中黑猪可视为一个较早熟的品种群,但后躯发育不足需要改进。通过选择和饲养方式有可能培育成长躯、稍瘦和丰臀的猪。
