The results of study are shown that the refined cottonseed oil is an vegetable oil which is very easy souring. Both of addition the antioxidants and storage with N_2 can prevent oils from souring, paticularly synthetic measure of addition the antioxidant BHT and storage with N_2 is the most prominent effect.

本项研究的目的是研究防止精炼棉籽油酸败的技术,找出在不同储藏条件下的变化规律。着重研究了添加抗氧化剂和充氮气等技术对保持食用油的品质、延长食用油的安全储藏期的效能,并在此基础上探讨了油脂抗氧化的理论和在实践上的应用。研究结果表明:精炼棉籽油是一种很容易酸败的食用植物油。添加抗氧化剂和充氮气等措施都有一定的防止酸败的作用,尤以添加抗氧化剂BHT和充氮气的综合措施,有很显著的效果。

本文对茶黄色素(Typ)化学成分及其对油脂的抗氧化活性进行了测定。结果表明,茶黄色素含有茶叶中大部分生物活性物质,是一类人体多功能保健食用色素并具有优异抗氧化活性,对油脂抗氧化作用比维生素E、C和二丁基羟基甲苯(BHT)强得多,在食用、油脂工业和药物应用上有美好开发前景。
