The results of the studies showed that the content of amino acids and Fe of the expanded soybean and corn powder were significantly increased, while that of VB_1>VB_2,carbohydrate and fat decreased (P<0.05). The increase in body weight,food efficiency (FE) and portein efficiency ratio(PER) of the expanded soybean powder group were 122.78±24.83,36.35±4.56,1.04±0.10 respectively in comparision with the nonexpanded soybean powder group,the corresponding figures of which were 73.0±20.03,33.18±4.82,0.74±0.11. The results showed that the figures of expanded soybean powder group were significantly different from those of the nonexpanded one (P<0.05). The digestibility, biological value and net utilization of the expanded soybean and corn powder group were slightly higher than those of the nonexpanded one,but there was no statistical difference between them (P>0.05).

本文对膨化前后的大豆粉和玉米粉进行了营养成分比较和动物实验。成分分析测定了膨化前后的蛋白质、脂肪、醣、钙、磷、铁、维生素B_1、B_2及氨基酸等。动物实验包括四周的生长实验和五天氨代谢实验。研究结果表明;膨化后大豆粉和玉米粉的氨基酸和铁的含量有所提高,维生素B_1、B_2、糖和脂肪的含量降低(p<0.05)。膨化大豆粉组动物四周增重饲料效价、蛋白质功效比值分别为122.78±24.83、36.35±4.56、1.04±0.10,与未膨比组73.0±20.03、33.18±4.82、0.74±0.11相比有显著差异(p<0.05),膨化大豆粉和玉米粉组动物的消化率、生物价、净利用率均略高于未膨化组,但统计学处理均无明显差异(p>0.05)。本文认为膨化大豆粉在促进动物增重,增加饲料利用和提高蛋白质功效比值等方面优于未膨化大豆粉,故可利用膨化工艺赋与大豆粉良好口感、风味的特点研制多种膨化食品。
