In order to search methods of determination of chilling injury of vegeta- bles on basis of postharvest physiology,the effect of storage temperature on cell membrane permeability and regularity of respiration of cucumber,snap bean,sweet pepper and garic sprout were studied.Cucumber stored at tempe- ratures causing chilling injury(0-11℃),its cell membrane permeability incre- ased with prolongation of time of exposure.Temperature rose to 20℃,the respiration rates of cucumber,snap bean and sweet pepper stored at unfavor- able chilling temperatures increased abnormally.Changes of the rates of cell membrane permeability and respiration were coincided with chilling injury.but developed earlier than appearances.It is possible to predict chilling injury of vegetables by using observation of changes of rates of cell membrane perme- ability and respiration.

试验研究了不同温度对黄瓜细胞膜渗透率的影响以及黄瓜、菜豆、甜椒、蒜苔在不同温度下贮藏后呼吸强度的变化规律,探求以蔬菜生理变化为依据测定贮藏中冷害的方法。试验结果证明:黄瓜在发生冷害的温度(0~11℃)下贮藏,随着贮藏温度的降低和时间的延长,细胞膜渗透率明显增加,黄瓜、菜豆、甜椒在发生冷害的温度下贮藏后,升温至20℃,呼吸强度表现异常的升高。而且升温后的呼吸强度与开始贮藏时呼吸强度的比值大于1。细胞膜渗透率及升温后呼吸强度的异常变化与冷害症状表现是一致的,但出现时间早。因而测定细胞膜渗透率和升温后呼吸强度的变化有可能成为预测蔬菜贮藏中冷害的方法。

Studies were carried out in 1979~1980 on main problems occured du-ring the storage of snap bean ( Phaseolus vulgaris L. ) the control of rus-set, decay, degreen and loss of freshness.

适宜的贮藏温度是控制菜豆锈斑和腐烂的重要前提。8℃是控制锈斑发生的临界温度,9±1℃是控制锈斑和腐烂的适宜贮藏温度;控制锈斑普遍发生的CO_2 分压临界值是2%,菜豆在贮藏中对乙烯不敏感,2.5ppm未见与锈斑、腐烂及衰老相关;用0.1毫米聚乙烯薄膜密闭,保持饱和高湿,是菜豆防衰保鲜的重要措施。用仲丁胺0.01毫升/升薰蒸可有效降低菜豆贮藏中腐烂率。

It has been found that the diseases caused by weak pathogens such as Penicillium, Aiternaria, Fusarium and others worsened greatly after irradi-ation, even under 10 Kroentgen dose treatment. This is due to the wea-kening of resistance of the treated products to diseases through physi-ological injury from radiation. On the other hand, radiation produces a disinfectant effect on bean rust, Uromyces appendiculatus,inhibits the de-velopment of telia of rust fungi in storage. From these facts, there fore,we consider that the disinfectant effect from radiation on vegetables depends not only on the sensitivity of products to radiation but also on the possibilities of reinfection of pathogens to products in storage.

1978~79两年的研究表明,γ-射线辐射能够推延番茄、青椒的后熟过程,抑制胡萝卜发根、发芽。但辐射又会促进产品组织褐变,削弱产品的抗病性,从而明显加重由青霉属、链格孢属、镰刀菌属等病原菌引起的病害。菜豆锈病的反应则不同,辐射可抑制其冬孢子堆在产品贮藏中发育。因此辐射能否在蔬菜贮藏中起防腐效应,既要看产品对射线的敏感性,还要看病原菌在产品贮藏中是否会重复浸染。
