本文阐述了“西瓜皮”现象及产生的条件,提出了 Ostwald 公式应用于机头设计时的局限性。认为宏观表现的“西瓜皮”症是熔体存在的法向应力差在其离模时被 Barus 效应所体现;高分子熔体线团的形变是剪应力、时间、粘度、压力的函数,其法向应力差的传递具有弥散及吸收现象,符合粘弹性法向应力波的传播特征;从而提出了用粘弹性法向应力波的数学模型和理论解释“西瓜皮”症及应用于机头设计的可能性。本文从高分子线团在机头内的粘弹性结构变化出发研究了法向应力差的变化,认为机头定型长度、粘度、压力的变化仅与“西瓜皮”壁厚差的程度有关,而机头入口角、过滤板的结构变化仅与“西瓜皮”条纹数有关。对常见的过滤板式、分流梭式、直角式大型吹塑机头产生“西瓜皮”症的原因进行了具体的理论分析并提出了的防治的措施。本文以熔体滑移和粘度包复理论分析了直角式吹塑机头产生“西瓜皮”症的特殊机理,提出了相应的防治措施。

This paper studied the production technology of watermelon skin juice. Compared the color-retention effect of different formulas, the best result are 0.10% ascorbic acid and 0.10% citric acid, 30 minutes. Many methods were used to improve juice extraction, freeze-thaw was as the best, - 18℃ for 90min. Orthogonal test was used to get the optimum compositions: ratio of watermelon skin juice to water is 1:4, sweetener 4.0% , acidified agent 0.03 % , essence 0.03 % .

以西瓜翠衣原料,进行饮料开发。初步确定了西瓜翠衣清汁饮料的加工工艺。比较了不同护色工艺的护色效果,得出最佳护色剂组合为0.10%的抗坏血酸和0.10%的柠檬酸的混合液,处理时间30min。研究了不同预处理方法对出汁率的影响,结果表明冷冻处理对提高西瓜翠衣的出汁率有更好的效果,处理温度为-18℃,处理时间为90min。利用正交试验确定了饮料的最佳配方为:翠衣汁与水比为1:4、甜味剂添加量为4.0%、酸味剂添加量为0.03%、增香剂添加量为0.03%。
