A Fungal strain (Mucor sp) M, prepucing lipase was screened from oilysoil, The optimized medium consists of (%): soybean flour 4.0, sucrose 0.5, olive oil.0, (NH4)2SO40.l,K=HPO40.2, MgSO40.0l, PH6.5. The optimal conditions for preducing lipase: PH6.5, 28℃, 96h.Tihs lipase has an optimum temperature of 50℃, an optimum PH of 8.0. It is stable in the PH range of 7.0~10.0. Metal ions, such as Fe2+. Ca2+. Mg2+、 K2+ can activate this enzyme.

从土样中分离筛选到一株脂肪酸菌株──毛霉(Mucorsp.)M,其优化后的培养基组成(%):黄豆粉40、蔗糖0.5、橄榄油10、硫酸铵0.l、磷酸氢二钾0.2、硫酸镁O.01、pH自然。产酶最适条件:初始pH6.5、培养温度28℃、培养周期96h。该酶最适作用温度50℃、最适pH80、pH稳定范围为7.0~10.0,Fe2+、Ca2+、Mg2+、K+对酶有激活作用。

Strain H4 was screened from fungi sampled from Hubei and Henan provinces, China. It was identified as Mucor sp. Strain H4 is thermotoerant and can ferment soybean curd into furu (i. e. Chinese cheese) well at 35℃. It is one of the most thermotoerant strains of Mucor which have ever been reported so far.

从湖北、河南等地收集、分离的61株霉菌中,筛选得到一株可发酵生产腐乳的耐热性霉菌-H4菌株。经鉴定,H4菌株为毛霉(Mucorsp.)。在35℃条件下,该菌株在豆腐坯上生长、发酵良好,为目前报道的最耐热的腐乳生产用菌种之一。
