In present experiment Canna edulis starch is used as row material for the production of high-fructose syrup by the use of amylases and immobilized glucose isomerase.The factors which affect the activities of a-amylase, glucoamylase and immobi-lized glucose isomerose,such as pH values,the concentrations of enzymes,the concen-trations of substrats,metal ions, temperatures and reaction times heve been studied in detail, and their optimum conditions have alsobeen determined.The dextrose equivalent values (DE) of hydrolytic solution may range between 95% and 99% by using the a-amylase and glucoamylase tohydrolyze the Canna edulis starch. The conversion ratios of glucose to fructose catalyzed by the immobilized glucose isomerase is from 45 to 54%. The sweetness of the product is over that of sucrose in the same concentration.By comparison with Monihot esculenta and Ipomoea batatas starchs, we arrive at a conclusion: The Canna edulis starch is a sort of ideal raw material for the production of high-fructose syrup. According to the biological properties of it, the Canna edulis may be cultured in the south of China.

本文研究了以蕉芋淀粉为原料,用淀粉酶和固定化葡萄糖异构酶生产果葡糖浆的各种最适条件,包括pH、酶浓度、底物浓度、金属离子、温度、时间等因素。结果表明,α-淀粉酶和葡萄糖淀粉酶水解蕉芋淀粉的葡萄糖值可达95一99%。固定化葡萄糖异构酶转化葡萄糖为果糖的转化率可达45-54%,其甜度超过同浓度的蔗糖。通过与木薯、甘薯淀粉比较实验表明,蕉芋淀粉是制造果糖的良好原料,而且,它在长江以南均可普遍栽培。
