Change of the nutrition compositions in 5 groups of loach fed with different formulated feeds was detected. It was discovered that the mass fraction of crude protein almost did not change at all, the mass fraction of crude fat was increased and the content of water was reduced. The loach protein contained all kinds of amino acids, and the methionine mass fraction was the lowest while the glutamic acid mass fraction was the highest in proportion. In tested loach, the amino acids and the essential amino acids were more abundant and the EAA∶AA ratio was higher than that of control. The total amount of amino acids, essential amino acids and the index of essential amino acids in test group 4 (4 #) were 1.56, 1.61 and 1.34 times those in control, respectively. The nutrition index of the loach in test group 2(2 #) was 1.32 times that in control. The essential amino acids in the protein were conformable to the adult nutritional requirement pattern (recommended by FAO/WHO/UNU),which also met the nutritional need of children and infants. Meanwhile, the flavor and quality of the natural loach were kept unchanged. In the test groups and the control, the variation of the mass fraction of 6 sorts of flavor creating amino acids was 1.752% in the acceptable range. The fatty acids C 12 , C 16 and C 18 were found to be the main ones in both test and control loach, and accounted for 64.7% to 92.2% of the total fatty acids. The level of these fatty acids was highest in group 1(1 #) and lowest in control.

The immunomodulating activities of enzymolyzed loach protein in mice were investigated by regular methods for immunology e-valuation.The doses of enzymolyzed loach protein were 0.1,0.2,0.4 g·kg-1 bw, which were 5,10,20 times respectively as large as the recommended daily intake(0.02 g·kg-1 bw) . After being successively fed with enzymolyzed loach protein at given doses for 30 days by ig respectively, the mice were detected by immunomodulation tests. The results indicated that enzymolyzed loach protein had significant modulating effects on all of test indexes and suggested it had apparent immunomodulating activities in mice. Based on the results described above, we speculate that the enzymolyzed loach protein may have immunomodulating functions and can enhance the immunity of body.

根据推荐的人群日摄入量(0.02g·kg~(-1))扩大5、10、20倍,剂量分别为0.1、0.2、0.4 g·kg~(-1),给昆明种小鼠连续灌胃酶解泥鳅蛋白一个月后,分别采用常规方法测试小鼠的各种免疫指标,观察酶解泥鳅蛋白对小鼠的免疫调节活性。结果表明:与空白组比较,低、中、高剂量组能明显增强ConA诱导的小鼠脾淋巴细胞增殖能力、二硝基氟苯诱导的小鼠迟发型变态反应、小鼠腹腔巨噬细胞吞噬鸡红细胞功能、抗体生成细胞能力和碳粒廓清能力,并能够显著升高小鼠血清溶血素含量。按照免疫调节作用评价程序规定,酶解泥鳅蛋白具有免疫调节作用。
