The condition of very-high-gravity fermentation is optimized. Plackett-Burman design is employed to select important factors and response surface analysis RSA is used to determine the optimum level. Under the optimum condition ergostreol 0.06% Tween 80 0.1% and temperature 30.5℃ alcohol yield is 15.32% v/v. The content of alcohol fermentation mashing enhanced 25% than the original condition.
