The influences of such environment as the structure of both enterprises and families on the diet were discussed and illustrated with the food consumption of Shanxing County. The author finally pointed out that the inevitable tendence of the Japanese diet is going to be advanced, varied, simplified and external. The general tendency of food circulation and processing and some other food enterprises is also predicted.

本文在对日本人食物结构和食物消费状况等进行调查和分析基础上,对于日本型食生活的形成及食物消费的变化进行了论述。着重阐述日本人平衡摄取营养,有利于健康长寿。同时还论述了产业结构、家庭结构等社会环境的变化对食生活的影响,并以山形县县民的食物消费状况作为具体事例进行分析。最后指出日本人食生活向高级化、多样化、简便化、外部化发展的必然趋势以及流通、加工等食品产业的大体发展方向。

对成都市国营食品企业34602例从业人员HBsAg携带情况进行调查,结果显示,HBsAg阳性率6.10%,不同食品行业有差异,其中以饮食供应业阳性率最高,达9.69%,(P<0.001)。为加强食品从业人员健康管理,预防乙型肝炎传播提供了一定的依据。

In this paper,the author makes a comparative analysis between the modern fast food enterprise and the traditional fast food enterprise, and puts forword four strategies to develop Chinese fast food industry:①Product;②Chains; ③Promotion; ④Environment.
