Pathogenic microbe is a primary biological factor which effects on the safety food. The article introduces the development of rapid detections of pathogenic microbe in food, and reviews modern methods of microbiology, immunology, nucleic acid hybridization and so on.

The problem about the food safety such as pesticide remains in food is more and more serious, and therefore much attention has been paid to the application of rapid detection. Rapid detections for pesticide remains that are widely used now such as vital analysis, chemical analysis, enzyme inhibiting analysis, immunity analysis, instrumental analysis are presented. The advantages and disadvantages of each technic, as well as their future development are also discussed.
