The stongest effect of peroxidation was observed when the ratio of heme group to H 2O 2 was nearly 1∶1.

在草鱼红、白色肉分离出的微粒体中,同时存在脂肪的酶氧化和非酶氧化两种体系。酶氧化体系需要ATP或ADP和Fe3+、Fe2+等因子的参与。高浓度的ADP对脂质氧化有抑制作用。Fe2+比Fe3+的催化作用强。红、白色肉细胞微粒体脂肪氧化最适pH值在6.0~7.0之间。高铁血红蛋白和肌红蛋白被过氧化氢激活后,能催化非酶氧化。在过氧化氢与血红素摩尔比为1∶1时,催化效果最佳。
