为了解陕西省食品中致病菌的污染状况 ,2 0 0 2年对陕西省食品中食源性致病菌进行了监测 ,在 5个监测点采集 6类 4 6 8份食品样本 ,按常规方法分离鉴定沙门氏菌、E .coliO15 7∶H7、单增李斯特氏菌。共分离到沙门氏菌 4 4株 ,E .coliO15 7∶H75株 ,单增李斯特氏菌 35株。以生肉类食品的污染率为高 (38 5 % )。分离的E .coliO15 7∶H7菌株中有 1株具有stx2、hly、eae毒力基因。调查结果提示食源性致病菌在食品中的污染状况比较严重 ,应引起有关部门的重视。

〔objective〕 To know the distributing condition the class of animal deposited host and the biological characteristic of separated strains of Salmonella, Listeria monocytogenes ,EHEC O157:H7, Staphylococcus aureus and Vibrio phrahaemolyticus in food of Beijing area. To determine the dangerous food of contamination by these pathogens preliminaryly . To provide scientific basis for supervision of food-born disease,〔Methods〕According to examination method of GB and use imported culture mediums ,We separated Salmonella, Listeria monocytogenes, EHEC O157:H7, Staphylococcus aureus and Vibrio phrahaemolyticus from all samples . We tested biochemical reaction(VITEK), serology identification to strains.〔Results〕Totally 927 various samples were tested including (raw meat, domestic animal dejecta, raw milk, icecream, yogurt,aquatic product ).Among all samples , 197 strains were positive for pathogens. The overall detectable rate is 21.3%. The strains and detectable rates for Salmonella, Listeria monocytogenes and Staphylococcus aureus are 65, 6.3%; 99, 9.6% respectively. No EHEC O157:H7 and Vibrio phrahaemolyticus were detected.In all 6 kind of food, the detectable rate of raw meat is the highest(37 7%),raw milk is the second (24 7%), No pathogens were detected from yogurt.〔Conclusions〕The study demonstrated that the pathogens contamination is existing in the food of Beijing area, the major contaminated food are raw meat and raw milk., The detectable rate of Listeria monocytogenes in meat and meat products is the highest(17.1%). Salmonella was mainly detected from raw poultry(19 4%) compared with other food, and mostly were S.entritidis. For Staphylococcus aureus, its detected rate is the highest in raw milk(24 7%). No Vibrio phrahaemolyticus was found in raw seafood,but cross- contamination of Staphylococcus aureus was existing, and no pathogens were detected in yogourt.

〔目的〕了解北京市食品中沙门菌、单增李斯特菌、EHECO157:H7、金黄色葡萄球菌和副溶血性弧菌的分布状况、动物储存宿主的种类、菌株生物学特点 ,初步确定可能污染上述致病菌的高危食品 ,为食物中毒监测提供科学依据。〔方法〕依据国标方法 ,采用进口显色培养基 ,对样本分别进行沙门菌、单增李斯特菌、EHECO157:H7、金黄色葡萄球菌和副溶血性弧菌分离、生化及血清学鉴定。〔结果〕检测生肉 (牛、猪、鸡 )、熟肉、生牛奶、冰激凌、酸奶各生食水产品六类样品共 92 7件 ,共检出致病菌 197株 ,总检出率 2 1.3 % ;其中分离沙门菌 3 3株 ,检出率 3 .2 % ;单增李斯特菌 99株 ,检出率 9.6% ;金黄色葡萄球菌 65株 ,检出率 6.3 %。EHECO157:H7和副溶血性弧菌均未检出。 6类食品中致病菌阳性率最高的为生肉 ( 3 7.7% ) ,其次为生奶 ( 2 4.7% ) ,酸奶中未检出致病菌。〔结论〕北京市居民主要消费食品存在食源性致病菌污染 ,其中生肉和生奶是主要污染食品品种 ,单增李斯特菌在肉与肉制品中污染率较高 ( 17.1% ) ,生肉 (鸡肉 )中沙门菌带菌率较高 ( ...

Methods Food samples were collected in 6 municipal cities and examined for presence of Salmonella spp.,Listeria monocytogenes,Escherichia coli O157:H7,Shigella spp.and Vibrio parahaemolyticus according to the national or international standard guidelines. Results During 2002~2004,54(4.49%) salmonella isolates,51(4.24%) Listeria monocytogenes,14(1.64%) Shigella and 3(0.25%) Escherichia coli O157:H7,were identified.Among the 205 seafood samples,41(20.00%) V. parahaemolyticus strains were isolated. Conclusion Pathogens contaminated foods in Guangxi are frequent.Notably,raw meat is heavily contaminated by Salmonella spp.,Listeria monocytogenes,Escherichia coli O157:H7,and Shigella(spp.).Cooked meat,aquatic products and vegetable are frequently contaminated by L. monocytogenes,and seafood by V.(parahaemolyticus.) Specific efforts towards prevention controls of food contamination are crucial to prevent food-borne illness.

目的监测了解主要食品中致病菌污染状况,构建广西食品致病菌污染数据库,为有效防治食源性疾病提供科学依据。方法在南宁、桂林等6个市采集6大类食品,按国家标准或国际标准方法对食品中沙门氏菌、单核细胞增生李斯特菌(L.m)、大肠杆菌O157:H7、志贺氏菌以及海产品中的副溶血弧菌进行分离与鉴定。结果2002~2004年在6市5类食品中检出沙门氏菌54株,检出率4.49%;其次为检出单增细胞李斯特菌51株,检出率为4.24%,志贺氏菌为1.64%、大肠杆菌O157:H7为0.25%;而另1类食品海产品中副溶血检出率高达20.00%(41/205)。结论广西主要食品均遭受食源性致病菌不同程度的污染;其中以生肉污染最为严重,受到了沙门氏菌、L.m、O157:H7、志贺氏菌的污染,熟肉、水产品、生食蔬菜也遭受L.m污染;而海产品副溶血弧菌污染严重。有针对性防范和控制各类食品致病菌的污染,是防止食源性疾病暴发的重要措施。
