The samples of prediction set were analyzed, and the correlation coefficient is 0.979 9 between the prediction values of the nearinfrared model and the standard chemical ones by Kjeldahl's method, and the average relative error is 1.76%. Using MoorePenrose matrix, we can not only get the nearinfrared spectroscopy analysis model's regression coefficients, but also know their contribution at every wavelength point. Consequently we can understand and explain the physical and chemical significance of the FTNIR whole spectroscopy regression model.  文章以66个小麦样品为实验材料,其中33个为建模集,剩余33个为预测集,利用广义逆矩阵直 接确定傅里叶变换近红外全谱分析回归模型中的回归系数,建立了用于蛋白质定量分析的近红外全谱回归 模型。用此模型对预测集中的样品进行预测,结果与凯氏定氮法测定结果间的相关系数为r=0．979 9,平均 相对误差为1．76％,表明由广义逆矩阵方法所建近红外全谱定量分析回归模型有较好的分析结果。所建模 型不仅可用于对样品的实际分析,而且可根据回归模型中各个系数了解各个波长点处的光谱信息对模型预 测值的贡献,从而可理解并解释傅里叶变换近红外全谱回归模型的物理学与化学意义。  The contents of moisture and protein of an amount of semimanufactured ham samples were determined using NIR1265 meat analyzer, compared with chemical methods prescribed in GB/T 5009.32003,GB/T 5009.52003. The detected data were analyzed with the software of Foss Company to establish a near infrared model specially predicting the quality of the common grade of semimanufactured ham. Compared with the chemical methods of the National Standard, the predicted data by the model had not a statistic... Compared with the chemical methods of the National Standard, the predicted data by the model had not a statistic difference with less than 0.5% average deviation, and the standard deviations of both methods were 0.33% and 0.27%, respectively. The novel method described in the model, which is simple, rapid and reliable, can be used in practice.  使用近红外肉类分析仪和国家标准湿化学分析方法对照测定大量样品中水分和蛋白的含量。通过数据分析,利用FOSS公司提供的建标软件建立了专用于普通级火腿肠半成品的近红外预测模型。该方法操作简单,重现性好,准确性高,预测结果与化学分析之间的偏差均小于0·5%,标准偏差分别为0·33%和0·27%,与国标法无显著性差异,具有很高的应用价值。
