The Evalation Methods to determine Meat and Fat Quality of pork As a result of a large number of analyses of the meat and fat of Pork,we have now set unified rules and can give a clear explantion to the principles of analyses, Sampling, equipments, chemicals and the methods of operation in the aspects of the PH of the meat、the colour of the meat, the tissue structure of the meat i.e. (the number of muscle fibres per Square millimetre, the diameter of muscle fiber,the space length between muscle bundles and the distribution of the lipophone), the chemicals composition of meat matter, crude protein, crude fat and crude ash), the rati meat, the ratio of oil to fat,the melting point of oil and This enables accurate figures to be obiatned for compar each other。

通过多次猪肉脂品质的测定,我们在此基础上制定了该方法。就分析原理、取样、仪器设备、化学试剂和操做方法做了详细的说明。以保证肉的pH、肉色、组织结构(每平方毫米肌纤维的数量、肌纤维直径、肌大束间距和脂肪球的分布);肉的化学组成(初水分、干物质、粗蛋白、粗脂肪和粗灰分)、熟肉率;脂肪的出油率、熔点和碘价等项指标的测定,获得更准确的结果。

There are 28 Sichuan pigs, 12 Foreign pigs and 122 Crossbred pigs in this experiment. The main characters of meat and fat quality have been analysed. Sichuan Pig has the best meat and fat quality, whereas Foreign Pig has the poorest meat and fat quality. The meat quality of Crossbred Pig lies in the middle between Sichuan and Foreign pigs, and its fat quality is as good as that of Sichuan Pig. The correlations between the characters of meat quality are not...

The correlations between the characters of meat quality are not high. There is an antagonism between meat quality and carcass lean meat percentage (yield). Most of the correlations of main fatty acid percentages with characters of meat quality are not so significant, but the correlations with carcass lean meat percentage are close.

本研究用4个四川猪种,3个引进猪种及其二、三元杂种猪共162头,测定并分析了主要肉质性状和脂肪酸比例,结果证明:四川猪的肉脂品质最佳,外种猪最差,杂种猪的肉质介于两者之间,其脂肪品质与四川猪接近;性状间相分析得出:肉质性状相互间呈中等相关,与胴体瘦肉率存在一定的拮抗性。脂肪酸比例与肉质性状间相关多不显著,而与胴体瘦肉率相关紧密。

测定了25头互助猪的胴体性能和肉脂品质,结果表明:互助猪的胴体性能远远劣于国外瘦肉型猪,但优于国内某些地方猪种,瘦肉率低是其显著特点;肉脂品质优于国外瘦肉型猪,表现在良好的肉色和肌间脂肪含量。相关分析表明:互助猪的产瘦肉能力与肉脂品质呈现出一定的拮抗关系,表现为胴体瘦肉率愈高,背膘愈薄,肌间脂肪含量就愈低,贮存损失率也愈大。
