     Seventeen home -made fish-sauce samples collected from Changle and 4 commercial fish-sauce samples processed in other cities were tested for N -nitroso compounds by GC-TEA and HPLC-TEA. Seven kinds of volatile N-nitrosamines (NDMA.NMEA,NDEA, NDPA, NPIP NPYR,and NMOR)were detected in all of the 21 samples with positive rates of 100%.

In this paper, the difference in photochemistry properties between nitrosamine and pigments is investigated. The TLC method of twice developing light-decomposition is presented to detect the volatile nitrosamines in grain.First, nitrosamine and pigments are developed within a certain distance and, after that, the nitrosamine is decomposed under irradiation with ultraviolet light. When they are developed for the second time, the pigments keep going up and are being completely separated from nitrosamine.

In the assay of rat esophageal epitheli-al cell-mediated mutagenesis,MBN co-uld be significantly activated to muta-genic metabolites to induce SCE,micr-onuclei and 6-TG mutant in V79cells,but this nitrosamine did notshow any mutagenic action on V79cells co-cultivated with chicken esophageal cells.No esophageal carcinoma was found in 26 Leghorncocks treated with MBN for as longas 975 days,the highest total dosebeing 1674 mg.The experimentalresults show that chicken esophagusis probably not susceptible to thecarcinogenic action of common vo-latile nitrosamines.At present,thereis no evidence to indicate the develop-ment of pharyngoesophageal cancer inLinxian chickens was due to the volatilenitrosamines that occurred in localfoods. The human esophageal epithe-lial cells from some cases examinedshowed a certain ability to activateMBN to metabolites mutagenic toV79 cells,although there was a sig-nificant individual variation in theactivation.In the mutagenesis of ??MBN;it is evident that the inductionof mutation in V79 cells was quant-itatively much lower with humanesophageal cell than with rat cell. Further studies are required toelucidate the importance of nitrosa-mines in the etiology of human eso-phageal cancer in the high-incidenceareas.
