运用扫描电镜和透射电镜对开菲尔粒表面结构及微生物分布进行了研究。开菲尔粒表面栖息着乳球菌、杆菌和酵母(可能还有醋酸菌)。开菲尔粒基质(Kefiran)确由多糖构成,开菲尔粒基质中有大量不具完整细胞结构的微生物,这一区域的微生物大量自解,很难与外界沟通。作为发酵剂而言,开菲尔粒表面的微生物具有更加重要的意义。

A kind of ancient but new-style milk beverage-Kefir was introduced. A general Survey of the etymology of the Kefir and its definition, specification and standard were described. About the Kefir grain, its nutritious composition and physiological functions in human health were reviewed. The manufacture of Kefir and its progress was introduced.
