The degradation of steaming_cooked shark fin cartilage in w =40% HAc solution at a pressure of 0.5MPa is increased to 34.2% in comparison with that untreated. The result of DSC shows that there are one endothermic peak, one small exothermic peak and one greater exothermic peak for shark fin cartilage. It was estimated that the endothermic peak at 76℃ to 83℃ is due possibly to the denaturation of collagen in shark fin cartilage and the structural breakdown of shark fin cartilage, specially the proteoglycan complex is greatly contributed to the greatest exothermic peak at about 360℃.
