Analysis of the SFI curves and triglyceride components of the cocoa butter replacershowed that its melting property resembles cocoa butter’s,but waxiness is stronger. If theadded amount is below 30 wt%,the cocoa butter replacer would be compatible with thenatural cocoa butter.

Melting point and crystalization of CBE products were affected by theconditions of 10℃ oil temperature and petroleum ether as the solvent. Substituted ace-tone for petroleum ether and separated crystals between 37-38℃ and 15℃ oil tempera-ture,we can obtain the products even crystalized, powderless and having melting pointby 36°.
