本文建立了甜菜糖品卫生细菌学检测实验体系中菌落总数测定技术,用以评估甜菜糖细菌污染程度,为精品卫生微生物学检验奠定了技术基础。菌落测定为食糖卫生评价提供了依据,为制糖工艺流程微生物污染和食糖贮存环境评估提供技术选择。5个糖期食糖检测表明,技术稳定可靠。不同糖厂、同一糖厂不同批次产品存在着不同的细菌污染情况,菌落测定技术为制糖工艺确定杀菌剂的类型和数量提供了直接依据。

The contents of harmful element Hg in the liver, kidney and meat of sixty fattening pigs fed in industral and agricultural region were detected by Atomic Absorption Spectrometry,,and mercury contents in correlative feed and sail were detected- The results showed that the mercury contents in pigs,feed and soil in industrai region were much higher than that in agricultural region(P<0.01) The relationship of mercury pollution and food chain was researched.

Quality assessment factors for surimi-based products were determined by analyzing the changes of aerobic bacterial counts, total volatile basic nitrogen (TVB-N), 2-thiobarbituric acid (TBA) value and their correlations to fish-ball stored at 15℃, 5℃, 0℃ and -18℃. It was showed that the aerobic bacterial counts, TVB-N and TBA value of fish-ball has significant correlation with the storage time, respectively. It was showed that the aerobic bacterial counts, TVB-N and TBA value of fish-ball has significant correlation with the storage time, respectively. TVB-N value, TBA value, total acid and aerobic bacterial counts could be used together as quality assessment indexes for surimi-based products.

以鱼丸为对象,通过研究15、5、0、-18℃四种贮藏温度下,鱼丸中细菌总数及TVB-N值、TBA值、总酸度的变化,分析这些变化与贮藏时间的相关性及化学指标与细菌总数变化的相关性,结果表明,细菌总数、TVB-N值、TBA值与贮藏时间呈显著性相关,TVB-N值、TBA值与细菌总数之间也具有明显的相关性,可将细菌总数与TVB-N值、TBA值、总酸度相结合,作为鱼丸等鱼糜制品的质量卫生评价指标。
